A mini rage or me raging on minis?
I know that mini cupcakes are all the rage but I ask why? I know that I have been told that this is a way of trying several different kinds of cupcakes or I am on a diet, and I only just want a taste. Have you every just tasted one potato chip? Of course not! These little bites are just small enough to make you want more. Usually by the time you are finished you mind as well have just eaten a gourmet size cupcake! Every baker makes them, me included, but with minis you can't put any of the amazing fillings in them that BC Cupcakery is famous for. That's not good! I guess they are good for a quick fix but I think a better idea is to just get the one that you love so much in a regular size. Dive into that creamy frosting and enjoy the cake and amazing filling. Go for broke and make it a gourmet size...if you got minis you would have eaten that much anyway!
In reality folks I will make any size you want, I guess its different strokes for different folks.
What we have ready for Spring is Lemon Meringue, of course filled with fresh lemon custard and piled high with toasted meringue. or strawberry shortcake, which is vanilla cake infused with fresh strawberries filled with a vanilla mousse and topped with a cream cheese frosting. Ours aren't sitting around, they are made fresh when you order.
